Ingredients
Cottage cheese 300 g
Sour cream 1 tsp
Honey 1 tsp
Icing sugar 1 tsp
Strawberries 3 pcs
Prunes 50 g
Banana 1/2 pc
Nuts
Whipped cream
Coconut flakes
Divide the cottage cheese into 2 equal parts. Add sour cream and honey to one, and strawberries and icing sugar to the other. Using a blender, blend both mixtures until smooth.
On a work surface, unfold plastic wrap and evenly sprinkle it with pink coconut flakes. Place the white cottage cheese mixture on top and gently spread it over the plastic wrap. Cut the prunes in half and place them on top of the curd mixture, leaving about 1 cm from the edge. Gradually lifting the cling film, roll the curd into a roll. Wrap it again in cling film and shape it into a more even shape.
Do the same with the strawberry mixture and white coconut flakes, replacing the prunes with two quarters of a banana, cut lengthwise.
Refrigerate the rolls for half an hour. Once they have firmed up, you can easily cut them into rolls and decorate them as desired.
