Bounty Ice Cream



Ingredients
Coconut milk 400 ml
35% cream 300 ml
White chocolate 100 g
2 eggs
5 tbsp sugar
50 g coconut flakes
200 g milk chocolate

Mix the egg yolks with sugar in a blender for a few minutes. Add the coconut milk and cream, and continue whisking until smooth.

Pour the mixture into a bowl or saucepan, add the white chocolate, and place in a double boiler. Cook, stirring, without letting it boil, for about 10 minutes.

Add the coconut flakes and stir. Remove from heat and place the bowl in cold water, stirring constantly until the mixture cools (it should still be slightly warm).

Add the coarsely chopped milk chocolate and let it sit for a minute to melt slightly. Then, using a spatula, stir the chocolate in with a few movements – it shouldn't completely incorporate with the other ingredients, just create a slight marbled effect.

Pour the mixture into a freezer-safe container and place it in the freezer. Stir the ice cream once or twice.
