Ingredients
3 apples
1 egg
1 cup flour
350 ml vegetable oil
35 ml sesame oil
175 g sugar
20 g sesame seeds
First, beat the egg, add 2 tablespoons of cold water, then the flour, and mix thoroughly. This is the batter.
Now take the apples, core them, peel them, cut them into lengthwise slices, roll them in flour, shake off any excess flour, dip them in the batter, and carefully coat each slice.
Heat vegetable oil to 190-200°C in a deep fryer or wok. Add the apple slices one at a time, being careful not to let them stick together. Fry until golden brown, then remove to a paper towel to drain off any excess oil.
Now let's make the caramel: take 2 tablespoons of light (not roasted) sesame oil or 1 tablespoon each of dark sesame oil and any other odorless vegetable oil. Heat over low heat in a suitable caramel-grade pan. Add sugar, stirring constantly until caramelized.
Once the caramel is golden brown, reduce the heat to low and add the sesame seeds. Stir well. Add the battered apple slices, mixing thoroughly until the caramel coats all the apples.
Lightly grease a suitable dish with oil and place the cooked apple slices in it. Prepare a separate bowl with cold water and ice. To prevent the caramel from sticking to your teeth and to ensure a crispy texture, dip each slice in cold water before eating.
