Ingredients
Watermelon 500 ml
Starch 40 g
Sugar 165 g
Vanilla extract 1 tsp
Cinnamon 1/4 stick
Optional:
Cinnamon
Chocolate
Pistachios
In a small bowl, mix a little watermelon puree with the starch until smooth. In a small saucepan, combine the watermelon puree, diluted starch, sugar, vanilla, and add the cinnamon stick.
Bring the mixture to a boil and reduce heat to low. Let it simmer, stirring occasionally, for 10-15 minutes until thickened. Prepare 2-4 ramekins by rinsing them under ice water. Do not dry them. Pour the thickened mixture into the wet ramekins and refrigerate overnight.
Serve in bowls or remove the pudding from them. Sprinkle with cinnamon, chocolate, and pistachios.
