Beef Lentil Soup

 



Ingredients:

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

500 g ground beef

1 cup dried lentils, rinsed

2 carrots, diced

2 celery stalks, sliced

400 g canned crushed tomatoes

6 cups beef broth

1 tsp ground cumin

1 tsp paprika

1/2 tsp dried thyme

Salt, to taste

Black pepper, to taste

Fresh parsley, chopped, for serving


Instructions:


1. Heat olive oil in a large pot over medium heat. Add

onion and cook until soft.

2. Add garlic and ground beef. Cook until beef is

browned, breaking it apart.

3. Stir in lentils, carrots, celery, tomatoes, broth, cumin,

paprika, thyme, salt, and pepper.

4. Bring to a gentle boil, then lower heat and simmer until

lentils are tender and soup is thick.

5. Taste and adjust seasoning. Serve hot with fresh

parsley.
