Classic Peach Cobbler Cheesecake Donuts Recipe
Ingredients:
For the Donuts:
2 cups all-purpose flour
2/3 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup milk
2 large eggs
1/4 cup melted butter
1 tsp vanilla extract
For the Peach Cobbler Filling:
2 ripe peaches, peeled and diced
1/4 cup granulated sugar
1 tsp ground cinnamon
1 tbsp lemon juice
1 tbsp cornstarch (optional, to thicken)
For the Cheesecake Glaze:
4 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2-3 tbsp milk (to thin out)
Preparation:
Prepare the Peach Filling: In a small saucepan, combine
diced peaches, sugar, cinnamon, and lemon juice. Cook
over medium heat until peaches soften, about 5 minutes.
If the mixture is too watery, stir in cornstarch to thicken.
Remove from heat and set aside to cool.
Make the Donuts: Preheat your oven to 350°F (175°C).
Grease a donut pan. In a large bowl, whisk together flour,
sugar, baking powder, salt, cinnamon, and nutmeg. In
another bowl, mix milk, eggs, melted butter, and vanilla
extract. Combine the wet and dry ingredients and stir
until smooth.
Assemble and Bake: Spoon the donut batter into the
donut pan, filling each cavity halfway. Add a small
spoonful of the peach filling into the center of each
donut, then cover with a bit more batter. Bake for 12-15
minutes or until golden brown and a toothpick inserted
comes out clean.
Prepare the Glaze: While the donuts are baking, whisk
together softened cream cheese, powdered sugar, vanilla
extract, and milk until smooth and pourable.
Finish the Donuts: Once the donuts have cooled slightly,
dip them into the cheesecake glaze. Drizzle with
remaining peach filling and serve.
