Vegan Raspberry Chia Pudding

 



Ingredients:


Pudding:

1/2 cup chia seeds

(80 g)

2 cups almond milk or other plant-based milk

(480 ml)

1/4 cup maple syrup or agave

(60 ml)

1 teaspoon vanilla extract

(5 ml)


Raspberry Layer:

1 cup fresh or frozen raspberries

(125 g)

1 tablespoon maple syrup

(15 ml)


Optional Topping:

Fresh berries, granola, or coconut flakes


Directions:


Whisk chia seeds, almond milk, maple syrup, and vanilla

in a bowl. Let sit 10 minutes, whisk again, then

refrigerate 2–4 hours until set.


Blend raspberries with maple syrup to make a smooth

compote.


Layer pudding and raspberry puree in cups. Top with

berries or coconut if desired.
