Greek Tortellini Pasta Salad

 



Ingredients:


Pasta Salad:

12 oz cheese tortellini

(340 g)

1 cup cherry tomatoes, halved

(150 g)

1 cup cucumber, diced

(130 g)

1/2 cup kalamata olives, sliced

(75 g)

1/2 cup feta cheese, crumbled

(75 g)

1/4 cup red onion, thinly sliced

(40 g)


Greek Dressing:

1/4 cup olive oil

(60 ml)

2 tablespoons red wine vinegar

(30 ml)

1 teaspoon dried oregano

(1 g)

Salt and pepper, to taste


Optional Garnish:

Fresh parsley or extra feta


Directions:


Cook tortellini according to package instructions and

cool.


In a bowl, whisk olive oil, vinegar, oregano, salt, and

pepper.


Toss tortellini with tomatoes, cucumber, olives, feta, and

onion.


Pour dressing over salad, toss gently, and chill before

serving.
