Mediterranean Meatball Rice Bowl with Tzatziki & Fresh Veggies
Ingredients:
For the meatballs
1 lb ground beef or ground lamb (or a mix)
1 egg
¼ cup breadcrumbs
2 cloves garlic, minced
1 tsp dried oregano
½ tsp ground cumin
½ tsp paprika
¾ tsp salt
¼ tsp black pepper
2 tbsp olive oil (for cooking)
For the rice:
1½ cups cooked rice (jasmine, basmati, or long-grain)
For the tzatziki:
1 cup Greek yogurt
½ cup cucumber, finely grated and squeezed dry
1 clove garlic, minced
1 tbsp olive oil
1 tbsp fresh lemon juice
Salt, to taste
Fresh veggie toppings:
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, thinly sliced
¼ cup crumbled feta cheese
Fresh parsley or dill, chopped
Directions:
1. In a bowl, combine the ground meat, egg,
breadcrumbs, garlic, oregano, cumin, paprika, salt, and
black pepper. Mix just until combined.
2. Roll the mixture into golf-ball-size meatballs.
3. Heat olive oil in a skillet over medium heat. Add the
meatballs and cook, turning occasionally, for 8 to 10
minutes until browned on all sides and cooked through.
4. In a small bowl, stir together the Greek yogurt, grated
cucumber, garlic, olive oil, lemon juice, and salt until
smooth. Chill if possible.
5. Assemble the bowls by adding cooked rice to the base.
6. Top with warm meatballs, cherry tomatoes, cucumber,
red onion, and feta.
7. Drizzle generously with tzatziki and finish with fresh
herbs.
