Lemon Pistachio Bars
Ingredients:
1½ cups all-purpose flour
⅓ cup powdered sugar
¼ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 tablespoons lemon zest (from about 2 lemons)
¼ cup fresh lemon juice
½ cup shelled pistachios, finely chopped
Extra powdered sugar for dusting
Instructions:
1. Preheat the oven to 350°F (175°C). Line a baking pan
with parchment paper.
2. In a bowl, mix the flour, powdered sugar, and salt. Cut
in the softened butter until the mixture looks like coarse
crumbs.
3. Press the mixture firmly into the bottom of the pan to
form the crust.
4. Bake the crust for about 15 minutes, until lightly
golden. Let cool slightly.
5. In another bowl, whisk together the granulated sugar,
eggs, lemon zest, and lemon juice until smooth. Stir in
the chopped pistachios.
6. Pour the lemon mixture over the warm crust and
spread evenly.
7. Bake again for about 20–25 minutes, until the filling is
set.
8. Let cool completely, then dust with powdered sugar
and cut into bars.
