Decadent Mint Chocolate Cheesecake Recipe 🌿
Ingredients:
- 2 cups chocolate wafer crumbs
- 1/2 cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup semisweet chocolate chips, melted
- 1/2 cup sour cream
- A few drops of green food coloring (optional)
Directions:
1. Preheat your oven to 325°F (165°C). Grease a 9-inch
springform pan and press the chocolate wafer crumb
mixture combined with melted butter evenly into the
bottom to form the crust.
2. In a large bowl, beat the softened cream cheese and
sugar until smooth. Add eggs one at a time, mixing well
after each addition.
3. Stir in the vanilla extract, peppermint extract, melted
chocolate chips, sour cream, and green food coloring if
desired. Pour the filling over the prepared crust.
4. Bake in the preheated oven for 50-55 minutes, or until
the center is just set. Turn off the oven and let the
cheesecake cool inside with the door slightly open for 1
hour.
5. Remove from the oven, refrigerate for at least 4 hours
or overnight before serving.

Tips:
- For a richer flavor, substitute dark chocolate chips for
semisweet and add crushed mint candies to the crust for
extra crunch.
- If you prefer a lighter version, use low-fat cream cheese
and Greek yogurt instead of sour cream.
- Serve with fresh whipped cream and chocolate
shavings for an elegant presentation, or add a layer of
chocolate ganache on top before chilling.
