Vietnamese Caramel Ginger Chicken

 



Ingredients:

1 kg skinless chicken thigh fillets, cut into large pieces

3 tbsp fish sauce

1 small red chili, finely chopped (optional)

3 tbsp vegetable oil

1/4 cup brown sugar

1/3 cup fresh ginger, cut into thin matchsticks

2 shallots, sliced

1/2 cup boiling water

Fresh cilantro or green onions, for serving

Steamed jasmine rice, for serving


Instructions:


1. Mix chicken with fish sauce and chili. Set aside while

preparing the pan.

2. Place oil and brown sugar in a cold pan. Turn heat to

medium and let the sugar melt into a deep caramel.

3. Remove from heat, carefully add chicken, ginger, and

shallots, then return to heat.

4. Stir until the chicken changes color, then add boiling

water.

5. Simmer uncovered for 10–12 minutes until the sauce

thickens and coats the chicken.

6. Serve hot with rice and garnish with cilantro or green

onions.
