Homemade Lemon Sugar Cinnamon Cookies Recipe 🍪
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- Zest of 2 lemons
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C) and line a baking
sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking
powder, cinnamon, and salt. Set aside.
3. In a large bowl, cream the softened butter and sugar
until light and fluffy, about 2-3 minutes. Add the egg,
lemon zest, lemon juice, and vanilla extract, and mix until
well combined.
4. Gradually add the dry ingredients to the wet mixture,
stirring until a dough forms. If the dough is too sticky,
chill it in the refrigerator for 10 minutes.
5. Scoop tablespoon-sized portions of dough onto the
prepared baking sheet, spacing them about 2 inches
apart. Flatten each slightly with the back of a spoon.
6. Bake for 10-12 minutes, or until the edges are golden
brown. Remove from the oven and let cool on the baking
sheet for 5 minutes before transferring to a wire rack.
