Chicken Vegetable Soup (Hearty, Cozy & Homemade)
Ingredients
2 tbsp olive oil
1 medium onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 cloves garlic, minced
1½ lbs boneless skinless chicken breasts or thighs
6 cups chicken broth
1 cup water
1 cup diced potatoes
1 cup green beans, trimmed and cut
1 cup corn kernels (fresh or frozen)
1 tsp dried thyme
1 tsp dried parsley
½ tsp salt
½ tsp black pepper
Optional: fresh parsley for garnish
Directions:
1. Heat olive oil in a large pot over medium heat. Add the
onion, carrots, and celery and cook for 4 to 5 minutes
until softened.
2. Stir in the garlic and cook for about 30 seconds until
fragrant.
3. Add the chicken, chicken broth, water, potatoes, green
beans, thyme, parsley, salt, and pepper.
4. Bring to a gentle boil, then reduce heat to low and
simmer uncovered for 25 to 30 minutes, until the chicken
is cooked through and vegetables are tender.
5. Remove the chicken from the pot, shred or chop into
bite-size pieces, then return it to the soup.
6. Stir in the corn and simmer for another 5 minutes.
7. Taste and adjust seasoning if needed. Serve hot,
garnished with fresh parsley if desired.
