Raspberry Peach Greek Yogurt Cake Recipe 🍑
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1 cup diced fresh peaches
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour
a 9-inch round cake pan.
2. In a medium bowl, whisk together the flour, baking
powder, baking soda, and salt. Set aside.
3. In a large bowl, mix the Greek yogurt, sugar, eggs,
vegetable oil, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet mixture,
stirring until just combined. Gently fold in the raspberries
and diced peaches.
5. Pour the batter into the prepared pan and smooth the
top. Bake for 40-45 minutes, or until a toothpick inserted
in the center comes out clean.
6. Remove from the oven and let the cake cool in the pan
for 10 minutes, then transfer to a wire rack to cool
completely.
