Herb-Roasted Chicken Drumsticks with Brown Rice & Steamed Broccoli | Easy Oven Meal

📝 Ingredients:

For the chicken drumsticks:


8 chicken drumsticks


2 tbsp olive oil


1 tbsp lemon juice


2 tsp dried thyme


1 tsp dried rosemary


1 tsp garlic powder


½ tsp smoked paprika


Salt & black pepper to taste


1 tbsp chopped fresh parsley (optional, for garnish)


For the sides:


1 cup brown rice


2 cups water or chicken broth


1 head of broccoli, cut into florets


Salt to taste


👨‍🍳 Instructions:


Preheat oven: Set to 200°C (390°F). Line a baking tray

with parchment paper or foil.


Season the chicken: In a large bowl, toss drumsticks with

olive oil, lemon juice, thyme, rosemary, garlic powder,

paprika, salt, and pepper until well coated.


Roast: Arrange chicken on the baking tray in a single

layer. Roast for 35–40 minutes, flipping halfway, until

golden and cooked through (internal temp 75°C/165°F).


Cook the rice: While the chicken bakes, rinse brown rice

and add it to a pot with 2 cups water or broth. Bring to a

boil, then cover and simmer for 30–35 minutes, until

fluffy and tender.


Steam the broccoli: In the last 10 minutes, steam broccoli

florets until bright green and just tender. Season lightly

with salt.


Serve: Plate the rice, top with roasted drumsticks, and

add a serving of broccoli. Garnish chicken with fresh

parsley if desired.


🔄 Tips & Variations:


Add chili flakes for a spicy twist.


Swap brown rice with quinoa, couscous, or mashed

potatoes.


Marinate chicken for 1–2 hours for extra flavor

(optional).
