Blueberry Almond Cottage Cheese Breakfast Bake
Ingredients:
Base:
1 cup rolled oats
(90 g)
1 cup cottage cheese
(225 g)
1/2 cup almond milk
(120 ml)
2 large eggs
1 teaspoon vanilla extract
(5 ml)
1/4 cup honey
(60 g)
Add-ins:
1 cup fresh or frozen blueberries
(150 g)
1/4 cup sliced almonds
(25 g)
1/2 teaspoon cinnamon
(1 g)
Pinch of salt
Optional Topping:
Extra blueberries or almond slices
Directions:
Preheat oven to 350°F / 175°C. Grease an 8x8-inch
baking dish.
Mix oats, cottage cheese, almond milk, eggs, vanilla,
honey, cinnamon, and salt until combined. Fold in
blueberries and almonds.
Pour into prepared dish and bake 35–40 minutes until set
and golden.
Let cool slightly, top with extra blueberries or almonds,
and serve warm.
