Cheese Cookies with Nuts and Sesame


Ingredients
Camembert Cheese 50g
Gouda Cheese 50g
Egg 1
Flour 150g
Baking Powder 2g
Butter 100g
Ground White Pepper 1/4 tsp
Red Bell Pepper 1/4 tsp
Nutmeg 0.5g
Pistachios 10g
Peanuts 10g
Sesame Seeds 10g
10% Cream 20ml

Cut both types of cheese into small pieces. Beat the egg with a fork in a small bowl.


Whisk the egg with a fork in a small bowl.

 Mix the flour with half a teaspoon of baking powder and add everything to a blender: cheese, flour, pieces of butter, spices, and half the egg mixture.


Mix until smooth crumbs form, then tip the mixture onto a work surface and knead the dough with your hands. Refrigerate for half an hour to an hour.


Hull the pistachios, rub them between your palms to remove the skins, and chop them with a knife. Chop the peanuts as well. You can use sesame seeds, poppy seeds, or freshly ground pepper. Add a tablespoon of cream to the remaining egg mixture.


Remove the dough from the refrigerator, knead it again by hand until soft, and roll it out on baking paper to a thickness of 3-4 mm. Use cookie cutters to cut out cookies; they can be cut quite close together because the dough is too thick. They will shrink during baking.


Remove any excess dough (roll it out again later), brush the cookies with egg wash, and garnish with nuts. Bake in a preheated oven at a medium temperature of about 180-200°C. Remove from the oven once they are golden brown. It's important not to overcook the cookies to enhance the cheese flavor.
