Ingredients
Water 2 cups
Oatmeal 2 cups
Flour 4 cups
Fresh yeast 25 g
Honey 2 tbsp
Salt 2 tsp
Mix the fresh yeast with the honey and dissolve in warm water. Mix the oatmeal with the remaining water and yeast solution. Let the mixture sit for 20 minutes to allow the oatmeal to swell slightly.
Add the salt and flour to the oatmeal and mix thoroughly until a smooth, soft dough forms. Place the dough in a warm place for an hour and a half, or until it has doubled in size.
Dust the surface with flour and turn the risen dough out onto it. Divide the dough into two parts and shape them into two loaves of any shape. Place the loaves on a baking sheet lined with parchment paper. Cover the baking sheet with a napkin and let rise for another 30 minutes.
Score the top with a sharp knife and carefully transfer the loaves to a preheated oven at 200°C (400°F). Bake for 30 minutes.
Remove the oatmeal bread from the oven and transfer it to a wire rack to cool completely.
