Mini Samosas with Lamb and Vegetables



Ingredients
Water 120 ml
Sugar 1 tsp
Butter 80 g
Flour 300 g
Lamb 200 g
Tomato 1
Bell pepper 1
Coriander 1 pinch
Garlic 1 clove
Cumin 1 tsp
Vegetable oil to taste

For the dough, dissolve the salt and sugar in the water. Sift the flour into a large bowl, add the butter, and rub in with your hands. Pour the sweet and salty water into the flour and knead the dough. Transfer to the countertop and knead thoroughly, adding flour as needed.

The dough should be elastic and firm, but soft and not sticky. Wrap in plastic wrap and refrigerate. Let's make the filling: heat the oil and fry the minced meat with chopped onion until golden brown.

Add chopped pepper and tomatoes and simmer, covered, over medium heat for about 20 minutes. Finally, add chopped olives, pressed garlic, salt, pepper, and season with spices. Simmer for another 5 minutes and set aside to cool.

Take the dough out and roll it out thinly. Cut out circles with a large circle, 10-12 cm in diameter. Place 1 tablespoon of filling in the center. Pinch the dough on three sides to form a triangle. This is how the pies turn out: small and neat.

Place on a baking sheet lined with a mat, brush with egg yolk, and sprinkle with sesame seeds.
Bake at 190°C for 30 minutes. Serve hot, as they're quite fatty! Perfect with broth!
