Ingredients
Flour 200 g
Butter 120 g
Gouda Cheese 100 g
Parmesan Cheese 100 g
Rosemary
Sea Salt
Sugar
In a bowl, combine the butter, both types of grated cheese, chopped rosemary, pepper, powdered sugar (optional), and salt (adjust for the saltiness of the cheese).
Mix well and gradually sift in the flour (you may need a little less than a cup). Knead the dough until it's soft, slightly sticky, and not too sticky. Refrigerate for 30 minutes.
Roll out some of the dough (keep the rest in the refrigerator) to a thickness of about 0.7-1 cm, and cut out cookies with a cookie cutter. Repeat with the remaining dough.
Place on a parchment-lined baking sheet and bake in a preheated oven for 10-12 minutes (the cookies are quite soft and will dry out as they cool).
