Harvest Apple Cranberry Spinach Salad

Ingredients

For the Salad


6 cups fresh baby spinach

1 crisp red apple, thinly sliced

1 crisp green apple, thinly sliced

½ cup dried cranberries

¾ cup pecan halves

½ cup crumbled feta cheese

3 tablespoons pumpkin seeds


For the Maple Dijon Dressing


¼ cup extra-virgin olive oil

2 tablespoons apple cider vinegar

1½ tablespoons pure maple syrup

1 teaspoon Dijon mustard

½ teaspoon garlic powder

¼ teaspoon salt

⅛ teaspoon black pepper


Instructions


Fresh apples, buttery toasted pecans and creamy feta

create a colorful bowl filled with sweet, tangy and

irresistible crunch.


Toast the pecans. 🌰 Place the pecans in a dry skillet

over medium-low heat. Cook for 3–4 minutes, stirring

often, until warm and fragrant. Let them cool.

Whisk the dressing. 🍁 Combine the olive oil, apple cider

vinegar, maple syrup, Dijon mustard, garlic powder, salt

and pepper in a small bowl. Whisk until glossy and

blended.

Build the salad. 🥬 Add the baby spinach to a large

serving bowl. Arrange the red and green apple slices over

the leaves.

Add the toppings. ❤️ Scatter the dried cranberries,

toasted pecans, feta and pumpkin seeds evenly across

the salad.

Dress and serve. 🥗 Drizzle the maple Dijon dressing over

the top just before serving. Toss gently so the spinach

stays fresh and the apples remain beautifully layered.

For an extra nostalgic bite, add a thinly sliced ripe pear
