🥗 Fresh Salad
🥬 3 cups shredded lettuce
🥒 4 cucumber slices
🧅 1/2 small red onion, thinly sliced into rings
🌿 Pinch of dried oregano
🍋 Lemon wedge for serving
🥣 Simple Dressing
🫒 2 tbsp olive oil
🍋 1 tbsp lemon juice
🧂 Pinch of salt
⚫ Pinch of black pepper
👩‍🍳 Instructions
Preheat the oven to 425°F (220°C) and line a baking tray
with parchment paper.
In a bowl, combine olive oil, garlic, paprika, oregano,
thyme, salt, and pepper. Coat the chicken drumsticks
thoroughly with the marinade.
Toss the potato wedges with olive oil, paprika, salt, and
pepper until evenly coated.
Arrange the drumsticks and potato wedges on the baking
tray in a single layer. Roast for 40–45 minutes, flipping
halfway through, until the chicken reaches an internal
temperature of 165°F (74°C) and the potatoes are golden
and crisp.
While everything bakes, prepare the salad by combining
lettuce, cucumber slices, and red onion rings in a bowl.
Whisk together olive oil, lemon juice, salt, and pepper for
the dressing. Drizzle lightly over the salad just before
serving.
Plate the crispy chicken drumsticks with roasted potato
wedges and fresh salad. Serve with extra lemon wedges
if desired.
💡 Helpful Notes & Variations
Add chili flakes for extra heat. 🌶️
Yukon Gold potatoes create especially crispy wedges. 🥔
Let the chicken rest for 5 minutes before serving for
juicier meat. 🍗
A garlic yogurt dip pairs beautifully with this dish. 🥣
