Ruby Pomegranate Vanilla Cream Bombs 🌹✨⠀The most romantic dessert dome of the year. Crack,ooze, devour. ❤️


📝 Ingredients
🤍 The Vanilla Cream Domes
・1½ cups heavy cream, ice cold
・8 oz mascarpone cheese, softened
・½ cup powdered sugar
・1 tbsp pure vanilla bean paste
・2 tsp gelatin powder
・3 tbsp cold water
🍓 The Ruby Pomegranate Glaze
・1½ cups pomegranate juice
・⅓ cup granulated sugar
・2 tbsp lemon juice
・½ cup heavy cream
・4 oz white chocolate, finely chopped
・1 tbsp gelatin powder
・3 tbsp cold water
・½ tsp deep red gel coloring
🌟 The Pomegranate Crown
・½ cup fresh pomegranate seeds
・Dried magenta rose buds
・2 tbsp crystal sugar
・Tiny edible silver flakes
👩‍🍳 Instructions

💧 Bloom 2 tsp gelatin in 3 tbsp cold water and let sit for
5 minutes until spongy.
🥣 Whip mascarpone with powdered sugar and vanilla
bean paste until silky smooth and glossy.
☁️ Whip heavy cream to soft peaks and fold gently into
the mascarpone for a cloud texture.
🔥 Warm the bloomed gelatin until liquid, then stream
into the mousse while folding continuously.
🥄 Fill silicone dome molds with the cream mixture and
freeze solid for 4 hours.
🍓 Simmer pomegranate juice with sugar and lemon
juice until reduced to a glossy ruby syrup.
❤️ Pour the warm syrup over chopped white chocolate
and heavy cream, stirring until ruby silk.
✨ Bloom remaining gelatin, melt, and whisk into the
glaze with red coloring until pourable at 90°F.
🎨 Place frozen domes on a wire rack and pour the ruby
glaze over the top in elegant cascading streams.
🌹 Crown each dome with a dried magenta rose, scatter
pomegranate seeds, dust crystal sugar, and finish with
silver flakes.
