🫒 1 tbsp olive oil

🧄 3 garlic cloves, minced

🍚 1 cup cooked rice
🥕 1 small carrot, julienned
🌿 1 cup chopped spinach
🧅 1 tbsp finely diced red onion
🫒 1 tsp olive oil
🌿 Fresh parsley for garnish
🌽 Creamy Corn Salad
🌽 1 cup sweet corn
🥬 1/2 cup shredded cabbage
🥕 1 small carrot, shredded
🥄 3 tbsp mayonnaise
🍋 1 tsp lemon juice
🧂 Pinch of salt & pepper
👩🍳 Instructions
In a small bowl, mix honey, garlic, paprika, salt, and black
pepper. Coat the chicken breasts evenly with the glaze.
Heat olive oil in a skillet over medium heat. Cook the
chicken for 5–6 minutes per side until deeply golden and
the internal temperature reaches 165°F (74°C).
During the final minute, add butter and spoon the glaze
over the chicken repeatedly for a glossy finish.
For the rice, heat olive oil in a pan and sauté the carrots
and red onion for 2 minutes. Add spinach and cook until
wilted.
Stir in the cooked rice and mix until heated through.
Garnish with parsley.
In a bowl, combine corn, cabbage, carrot, mayonnaise,
lemon juice, salt, and pepper. Toss until creamy and well
coated.
Plate the glazed chicken beside the herbed rice and
creamy corn salad. Serve warm.
💡 Helpful Notes & Variations
Add chili flakes for a spicy honey glaze. 🌶️
Greek yogurt can replace mayonnaise for a lighter corn
salad. 🥣
Brown rice or quinoa work beautifully in place of white
