Cabbage, Apple, and Ginger Salad


Ingredients
Cabbage 1000 g
Apples 3
Lemon 1
Ginger 15 g
Olive oil 175 ml
Red wine vinegar 4 tbsp
Honey 1 tbsp
Mustard 1 tbsp
Salt
Pepper

Shred the cabbage into long, thin strips. Then, place the cabbage in a bowl, add a little salt, mix, and knead the cabbage. This will make it a little softer and juicier, but still retain its flavor.

Now for the apples. Core them and cut them into strips. Be sure to sprinkle the apples with lemon juice, otherwise they will quickly oxidize and the salad will completely lose its flavor.

 Peel the ginger and grate it finely. You may have some strings left on the grater; we don't need them, so feel free to discard them. Now combine the cabbage, ginger, and apples in a bowl. Stir and begin making the dressing.


In a small bowl, combine the olive oil, vinegar, honey, and mustard. Whisk or blend until smooth and season with salt and pepper. Add the dressing to the salad.
