Potato Salad with Smoked Mackerel



Ingredients
Potatoes 350 g
Hot-smoked mackerel 200 g
Cucumber 100 g
Apple 100 g
Green onion 1 bunch
Vegetable oil 3 tbsp
Lemon juice 1 tbsp
Sugar 1 pinch
Salt to taste
Ground black pepper to taste

Wash the potatoes thoroughly, boil them in their skins until tender, cool, and peel. Dice the potatoes.

 By hand, separate the hot-smoked mackerel into individual flakes (if cold-smoked, cut into small cubes). Wash the cucumber and apple.

Cut the cucumber into small cubes. Peel the apple, cut into small cubes, and drizzle with a little lemon juice.

For the dressing, combine the vegetable oil, lemon juice, a pinch of sugar, salt, and freshly ground black pepper. Mix thoroughly. 

You can use Lenten mayonnaise instead of the suggested dressing.

Place the potatoes, fish, apple, and cucumber in a bowl, drizzle with the dressing, and gently toss the salad, being careful not to crush the potatoes.

Refrigerate the salad and let it sit for several hours (best served the next day).

When serving, season the salad with freshly ground black pepper and sprinkle with green onions.
