Ingredients
Beef (tongue) 300 g
Dried apricots 200 g
Prunes 200 g
Onion 1
Herbs
Sugar 1/2 tsp
Salt 1 pinch
Lemon juice 1 tsp
Boil the tongue until tender, peel and finely dice. Peel the onion, finely dice it, place it in a bowl, add sugar, salt, vinegar, and pour boiling water over it. Add enough boiling water to completely cover the onion.
Let the onion cool completely in the marinade, then drain.
Pour hot water over the dried apricots and prunes, soak for 30 minutes, then dry and cut into small cubes.
Assemble the salad: grease the bottom of a salad bowl with mayonnaise, add the tongue, a little mayonnaise, onion, and dried apricots, then more mayonnaise and a layer of prunes. Garnish with dried fruit and sprigs of herbs.
