Onion 1/2
Basil 50g
Vinegar 9% 2 tbsp
Baguette 1
Garlic 2 cloves
Arugula 1 tbsp
Parsley 1 tbsp
Cilantro 1 tbsp
Cherry Tomatoes 3
Cut the tomatoes in half. Cut the onion into half rings. Finely chop the herbs.
Now, finely puree the round tomatoes, onion, and herbs in a blender.
Squeeze out the excess juice using cheesecloth. This will create a thick vegetable puree and a unique vegetable juice.
This juice will serve as the base for the salad dressing. You can use the puree for sandwiches.
Slice the baguette lengthwise and brush each half with olive oil and rub with garlic.
Cut the baguette into large pieces for the salad. Sprinkle with dried herbs and toast in the oven.
Arrange the cherry tomato halves, herbs, and baguette pieces on a plate and dress the salad with olive oil mixed with the vegetable juice from earlier.
