Green Asparagus Salad with Smoked Salmon


Ingredients
Lettuce 200g
Cold-smoked salmon 100g
Asparagus 1 bunch
Bread 2 slices
Cucumber 2 pcs

For the dressing:
Olive oil 6 tbsp
Lemon juice
Mustard 2 tsp
Honey 1 tsp
Fresh basil 2 sprigs
Shallot 1 pc
Water 2 tbsp

Place the salad greens and cucumbers in a salad bowl. To prepare the asparagus for cooking, remove the tough ends, leaving 1-2 cm from the edge.


Boil the asparagus in boiling salted water for 2-3 minutes. Drain and rinse under cold running water. Coarsely chop the lettuce, reserving the stems and setting them aside. Place the stems with the salad greens.


Cut the bread into cubes and toast in a dry frying pan until crisp.



Place all dressing ingredients in a blender and blend until smooth.



Combine half the dressing with the salad greens. Mix well and divide the salad among serving bowls.



Top with salmon pieces, croutons, and asparagus spears. Drizzle the remaining dressing over the salad.
