Ingredients
1/4 bunch parsley
1 bunch arugula
2 sprigs mint
1/2 cup cherries
Olive oil
1/2 onion
1/2 cup cheese
Salt to taste
Pepper to taste
Chop the parsley and mix with the arugula and mint. It's best to separate the mint stems from the leaves; we won't need the stems. Finely chop the onion and pit the berries.
Dress the leaves with oil, salt, and pepper, then add the diced cheese, onion, and berries and mix well.
Place in a bowl and serve.
