Ingredients
1 onion
1 clove garlic
1 bunch green onions
400 g mushrooms
100 g cherry tomatoes
100 g tomato
2 tbsp olive oil
2 tbsp parsley
Salt
Pepper
Cut the onion into half rings. Finely chop the garlic. Quarter the mushrooms. Chop the green onions. Cut the tomatoes into eighths; do not chop the cherry tomatoes.
Heat the olive oil in a deep frying pan and sauté the onion until translucent. Add the garlic toward the end of the frying time. Then add the mushrooms and fry for 3-5 minutes. Stir in the tomatoes and green onions, and simmer for another 3 minutes.
Season the salad with salt, pepper, and lemon juice and zest. Serve warm, sprinkled with chopped parsley.
