Cornbread with Bacon and Chili



Ingredients
Cornmeal 150g
Flour 150g
Baking powder 2 tsp
Baking soda 1/2 tsp
Eggs 2
Kefir 180ml
Milk 180ml
Butter 50g
Smoked bacon 150g
Jalapeño pepper 2 tbsp

Finely chop the bacon. Heat a dry frying pan over low heat, add the bacon, and fry, stirring occasionally, until almost crisp, about 7-8 minutes.

Mix both types of flour, salt, baking soda, and baking powder. In a separate bowl, combine the kefir, milk, melted butter, and eggs. Add to the dry mixture and mix well. Add the bacon and pepper. Stir again.

Place the dough in a greased pan and bake in a preheated oven at 200 degrees Celsius. Bake until crisp, about 25 minutes. Serve warm or completely chilled.
