Ingredients
for the dough:
500 g bread flour
25 g fresh yeast
300 ml water
1 tbsp salt
2 tbsp sugar
For the filling:
150 g mozzarella cheese
100 g olives
Pizza sauce
Parmesan cheese
In a mixer bowl, mix the flour and yeast for 1 minute. Add the water, olive oil, sugar, and salt, continuing to knead for 10 minutes. The dough should be soft, elastic, and easy to work with. Cover the bowl with cling film and let it rise until doubled in size.
Preheat oven to 190 degrees Celsius. Divide the dough into 15 pieces. Form balls and place an olive and a cube of cheese inside each ball. Form them into balls again and place them in a springform pan (optional).
Let them rise for 15 minutes to allow the balls to stick together. Brush with sauce and sprinkle with grated cheese. Bake for 35 minutes, until the dough is set and the cheese is golden brown.
