Baked Spicy Mackerel with Potatoes



Ingredients
Mackerel 5
Potatoes 1200 g
Lime 2
Red chili pepper 2
Garlic 3 cloves
Cumin 1/4 tsp
Coriander 1/4 tsp
Olive oil 4 tbsp
Salt to taste

Cut the potatoes into quarters (if using small potatoes, you can leave them whole). Boil in salted water until half-cooked, about 10 minutes. Drain.

Remove the seeds from the peppers. Place the peppers in a blender with the garlic, spices, and 2 tbsp olive oil. Puree.

Salt the fish and coat it inside and out with the spicy mixture. Place in a baking dish.

 Place the potatoes and quartered limes around the fish, brushing with the remaining 2 tablespoons of oil.

Preheat the oven to 200°C and bake for 20-30 minutes, until the potatoes are tender. Squeeze the lime juice over the fish when serving.
