Gut the fish, removing the head and spine. Carefully trim the meat from the skin. Chop the fish flesh and lard, and grind in a meat grinder or food processor.
Stale bread is best. Soak it in milk for 10 minutes, then squeeze it out and add it to the minced fish. Mix everything together, season with salt and pepper, add the eggs, and mix thoroughly again.
Scoop the mixture with a spoon, drop it into the flour, bread it, form into patties, and fry on both sides in vegetable oil.
If desired, you can form a flat cake out of the fish mixture, place a piece of hard cheese in the center, and roll it up, then form it into a patty.
