Ingredients
Egg whites 4 pcs
Salt
Ground black pepper
Tilapia (fillet) 450 g
Cornmeal 1 cup
Flour 1/2 cup
Vegetable oil 1 cup
Tilapia can be substituted with cod, catfish, or haddock.
Preheat oven to 120°C (250°F). Line a baking sheet with aluminum foil. In a large bowl, whisk the egg whites, 2 teaspoons salt, and 1/4 teaspoon pepper. Add the fish and toss to combine.
In another large bowl, combine the cornmeal and flour, season with salt and pepper. Dip the fish in the egg mixture, letting any excess drip off, and then coat in the flour mixture.
Heat the oil in a large skillet over medium heat. Fry the fish sticks in batches until golden brown, 4 to 6 minutes, turning once.
If the fish browns too quickly, reduce the heat. Place the cooked fish on a baking sheet and keep in the oven to keep warm. Serve the fish sticks with ketchup.
