Salmon patties with potatoes and herbs



Ingredients
Salmon 900 g
Potatoes 900 g
Parsley 1 bunch
Butter 1 tbsp
Salt
Ground black pepper
Vegetable oil
Flour

Peel the potatoes and boil them in salted water until tender. Drain, add butter, and mash. Set aside, keeping the potatoes warm.

Cut the fish into large chunks, place in a deep saucepan, cover with water, and simmer over moderate heat for 5-8 minutes, until translucent. Remove and cool for a few minutes. Use your hands to shred the fish, carefully removing any bones.

Place the mashed potatoes and fish chunks in a deep bowl. Add chopped parsley. Mix gently, adding salt and ground black pepper.

Form round patties and, after rolling them in flour, fry them on both sides until golden brown. Serve with lemon wedges and tartar sauce.
