Salmon baked in cheese with vegetables


Ingredients
Salmon (fillet) 1200 g
Parmesan cheese 8 tbsp
Butter 4 tbsp
Breadcrumbs 4 tbsp
Olive oil 4 tbsp
For the sauce:
Olive oil 1/2 cup
Fresh basil 1 bunch
Pine nuts 3 tsp
Cayenne pepper
Salt

Vegetables:
Celery (root) 1 pc
Carrots 4 pcs
Zucchini 2 pcs
Eggplant 2 pcs
Olive oil 1/2 cup
Garlic 1 tbsp
Thyme 3 sprigs

Cut the salmon fillet into pieces and fry in olive oil.

 Mix together the butter, breadcrumbs, and Parmesan cheese. Rub the fried fish pieces with the mixture. Place the fish in the oven at 160°C (325°F) and cook until golden brown.


While the fish is cooking, prepare the sauce and vegetables.
Pour 1/2 cup olive oil into a suitable container, add chopped basil, pine nuts, cayenne pepper, and salt (to taste).


Cut the vegetables into strips and sauté in oil with garlic, thyme, and spices.


Place the vegetables and the fish piece, drizzled with the sauce, on a plate.
The dish is ready and is best served with bread rolls.
