Ingredients
Salmon (fillet) 200 g
Salt 1/2 tsp
Pepper 1/2 tsp
Vegetable oil 2 tbsp
Tomatoes 4
Red onion 1
Lime 1
Red chili pepper 1
Preheat the grill to medium. Sprinkle the fillets with 1/4 teaspoon of salt and 1/4 teaspoon of ground black pepper. Place the fish on an oiled grill. Grill the fillets for about 4 minutes on each side. Remove the fish from the grill.
Place the tomatoes, cut side down, onion, and chili on the grill. Grill the tomatoes for about 6 minutes. Turn the tomatoes over and grill for another minute. Grill the onion and pepper for about 6 minutes on each side. Remove the vegetables from the grill and let cool.
Coarsely chop the tomatoes and onion, and finely chop the chili. Combine the tomatoes, onion, chili, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and the juice of 1/2 lime in a bowl.
Serve the salsa with the fish and lime wedges.
