Lemon
Clean and rinse the pike-perch thoroughly. Optionally, you can remove the bones or marinate and bake the fish whole.
Chop the herbs and mix them with the spices. Rub the fish with the prepared spice mixture and let it marinate overnight.
Bake in foil or parchment paper in a preheated oven for no more than 20 minutes. 5 minutes before the end of cooking, slightly open the foil or parchment paper to allow the skin to brown.
Serve with a radish salad with fresh herbs. Sprinkle the pike-perch with lemon juice before serving.
