Double-Breaded Sea Bass


Ingredients
Sea Bass
Lemon juice
Vegetable oil
Ground black pepper
Coriander
Egg
Milk
Flour
Breadcrumbs

Cut the fish into squares on the skin side and marinate in a simple marinade: a little lemon juice, vegetable oil, ground black pepper, and ground coriander seeds. Mix well and brush over the fish, paying particular attention to the cuts.

Let marinate for at least 30 minutes.

Whisk the egg with a spoonful of milk and lightly salt.
Dip the fish in the egg and soak thoroughly.

Transfer to a plate with flour and turn to coat thoroughly.
Dip in the egg again and then in the breadcrumbs. Let the fish rest briefly to allow the breading to soften and prevent it from falling off.


Place the fish in the pan and quickly fry on both sides, about 2-3 minutes per side.
Then place them on a baking sheet and bake in a preheated oven for 5 minutes.
