Ingredients
4 salmon fillets
3 tbsp vegetable oil
pepper
salt
For the sauce:
1 cucumber
1 tbsp butter
2 green onions
2 tbsp dill
3 tbsp 35% cream
2 tsp lemon juice
1 tsp sugar
pepper
salt
Preheat oven to 230°C. Pour the oil onto a baking sheet. Rinse the salmon fillets with water and pat dry with paper towels. Place the fillets on the baking sheet, scale side up. Bake for 2 minutes. Remove, carefully turn over, and bake for another 6-7 minutes, until done.
Meanwhile, make the sauce:
Peel the cucumber and cut into wedges. Melt the butter in a saucepan. Add the cucumbers, green onions, salt, and pepper, and simmer for 2-3 minutes. Add the dill, cream, lemon juice, and sugar, mix well, and remove from heat. Pour the sauce over the fish.
It's important not to overcook the sauce! 3 minutes maximum.
