Ingredients
900 g salmon
4 lemons
3 tbsp olive oil
Salt to taste
Pepper to taste
For the tzatziki sauce:
2 cups yogurt
1 cucumber
Lemon juice
3 cloves garlic
2 tbsp dill
Salt to taste
Pepper to taste
Soak the skewers in water for at least an hour. Preheat the grill to medium. Thread the salmon, alternating with lemon slices (5-6 slices on each skewer).
Drizzle with olive oil, salt, and pepper. Squeeze half the lemon over the top. Transfer the skewers to the grill and grill for 3 minutes, until the salmon is cooked through. Remove the skewers from the grill and let them rest for about 5 minutes (the fish will continue to cook). Serve with tzatziki sauce and lemon.
For the sauce, grate the cucumber and mix with the remaining ingredients. Season with salt and pepper to taste.
