Ingredients
Cod (fillet) 600 g
Potatoes 500 g
Eggs 4
Garlic 2 cloves
Parsley to taste
Salt
Black peppercorns
Bay leaf
Peel the potatoes and boil them in salted water until tender. Mash the potatoes.
Boil the fish in salted water with a few black peppercorns and a bay leaf until tender, about 10-12 minutes. Drain the broth, pat the fish dry on a paper towel, and break it into small pieces using your hands or a fork.
Mix the fish and potatoes, add chopped parsley and garlic, and begin adding one egg at a time, stirring thoroughly until smooth. Form the croquettes with wet hands or using two spoons.
Fry the croquettes in small batches in plenty of vegetable oil until golden brown. After frying, place them on a paper towel to remove excess oil.
Sprinkle the finished croquettes with chopped parsley and drizzle with lemon juice.
