Kiwi and Coconut Muffins



Ingredients
2 kiwis
5 tbsp coconut flakes
2 eggs
2 cups flour
150 g sugar
2 tsp orange zest
3 tbsp honey
0.5 tsp vanilla
120 ml coconut milk
1.5 tsp baking powder
60 g butter
Salt

Peel the kiwi and cut into small cubes.

Whisk the eggs with sugar, add melted butter and coconut milk. Mix. Then add the orange zest, honey, and vanilla. Gradually add flour, baking powder, and salt.

Fold the coconut flakes (3 tbsp) and kiwi pieces into the batter. Mix gently. Fill greased muffin tins 3/4 full with batter. Sprinkle with the remaining coconut flakes.

Bake for 18-20 minutes in an oven preheated to 170°C (350°F).
