Ingredients
For the dough:
110 g butter
1 cup sugar
1 cup heavy cream
1 tsp vanilla
1 tsp baking powder
1.5 cups flour
4 egg whites
60 g dark chocolate
For the strawberry sauce:
1000 g strawberries
1/4 cup sugar
1/4 cup water
2 tbsp lemon juice
Preheat the oven to 175°C (350°F) and grease the pie pans with butter and dust with flour. Beat the butter and sugar until light and fluffy, then add the heavy cream and vanilla. Stir.
Sift the flour and baking powder together, then gradually add to the main mixture.
Whisk the egg whites until stiff peaks form. Gradually fold them into the main mixture and fold gently to prevent the whites from settling.
Pour 1/3 of the batter into a small bowl and stir in the melted chocolate until smooth.
Pour half of the white batter into the pan and smooth it out with a spatula. Pour in the chocolate batter and top with the remaining vanilla batter (do not stir yet). Now, using a knife, lightly trace the raw dough (an S or a back-and-forth zigzag). Be careful not to over-stir, or you won't get the marbled effect. Bake for about 35 minutes.
Place all the sauce ingredients in a saucepan and bring to a simmer over medium heat.
Cool and serve with the pie.
