Ingredients
Dried cranberries 1/2 cup
Flour 2 cups
Baking powder 1 tsp
Baking soda 1/2 tsp
Cinnamon 1 tsp
Nutmeg 1 tsp
Clives 1/4 tsp
Brown sugar 2 cups
Butter 220 g
Eggs 3
Vanilla 1 tsp
Pear 1
Green apple 2
Nuts 1 cup
Salt 1/2 tsp
Place the cranberries in a small bowl and cover with warm water. Let them soak for about an hour. Then drain and set aside.
Preheat the oven to 180°C. Grease a muffin tin with butter and dust with flour.
In a stand mixer, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, salt, and both types of sugar. Add the butter, eggs, and vanilla. Beat the mixture with a mixer on high speed until smooth and light (2-3 minutes).
Add the chopped apples, pears, nuts, and cranberries. Pour the batter into the tin and bake for about an hour (test with a toothpick for doneness). Cool and remove from the tin.
