Ingredients
For the dough:
Flour 210 g
Egg 1
Icing sugar 50 g
Butter 100 g
Salt 1 pinch
Baking powder 1/4 tsp
For the filling:
Cottage cheese 200 g
Sugar 40 g
Flour 30 g
Sour cream 20 g
Egg yolk 1/2
For greasing:
Egg 1/2
Water 1 tbsp
This amount of dough and filling is enough for six large pies. In a canteen, sochniki are cut out of 5 mm thick dough with an oval cutter using an oval cutter. We simply roll out each piece of dough to the desired thickness (firstly, to use up all the dough, and secondly, because not everyone has an oval cutter). Don't add too much baking powder, as it may cause the dough to crack (the original only uses ammonium).
