Apple Solonniki


Ingredients
For the pancakes:
Milk 500 ml
Flour 200 g
Egg whites 2
Egg yolks 4
Butter 40 g
Salt 1 tsp

For the filling:
Sugar 5 tbsp
Green apples 4
Egg whites 2
Butter 20 g
Lemon juice 1 tsp
Cinnamon 1 tsp
Honey 1 tbsp

Make the pancakes. Peel and grate the apples. Simmer the apples over low heat, first melting the butter in a saucepan, then adding the grated apples. Stir, cover, and simmer until softened. Shortly before cooking, add honey and cinnamon. Then place in a sieve to drain off excess juice. 

Whip 2 egg whites with sugar and lemon juice until stiff peaks form. We'll use this foam to cover the blini before baking.

Cut the pancakes into four equal pieces, like pizzas. Fill each piece with applesauce, roll the pancake into a cone, and place them one by one on a baking sheet covered with parchment paper.

Place a small amount of meringue cream on top. Now bake them in the oven at 250 degrees Celsius for 2-3 minutes to lightly brown the meringue cream.
